This richness is often associated with a full bodied coffee, and is a similar taste to a syrupy caramel. This rich butter flavour is developed through growing, harvesting, processing and roasting. Mineral content and pH levels of the soil coffee plants are grown in will affect the flavours that come into the bean. Then harvesting at peak time, generally the riper the fruit, the sweeter the coffee will be. The semi-washed or honey processing method allows the thin mucilage layer of sugar to remain on the bean while drying, which produces a sweeter and more balanced tasting bean, which will produce a butter like taste. Finally a medium roast will bring out these sugars, without carbonising the centre of the bean, creating a stable and sweet taste.
