A bold and intense acidity is often found in coffees that are grown at high altitudes with mineral rich, volcanic soils. This is often the desired effect of these specialty coffees, and as such are processed and roasted to further intensify the sensation. Lighter roasted coffees often have higher acidity, due to the sugars being developed by the heat, but not burnt, which brings more of a sweetness.
